Most don’t know how easy and how inexpensive it is to make cottage cheese at home. This was a complete accident for me. I was making yogurt and it wasn’t thickening at all, so I decided to warm it up again. You can see how to make yogurt here:
Suddenly I had cottage cheese in my pot, and that night we had the best perogies I had ever tasted.
All you need is:
- Whole milk
- 1 T yogurt
- Coffee filter
2. Once it reaches a boil, remove from heat and cool slightly.
Make sure you stir well.
6. Let sit in a warm place for 24 hours. This is when bacteria will multiply, souring the milk.
Do this in your refrigerator.
Little Miss muffet, sat on her tuffet, eating her curds and whey. Now we know what that meant. Whey is a great source of protein and healthy bacteria. You can add it to your baking recipes in replacement for milk or other liquids. Whey can be kept in the fridge for up to a week.
