Whole Wheat Banana Nut Chocolate Chip Muffins

These muffins are so good, and packed full of protein and fibre. There is no reason why good for you can’t taste great, so that is exactly what I set out to achieve. The reason why this recipe is a money saver is because these muffins make a great snack, easy to send to school, so you won’t have to buy snacks.  This recipe has some expensive ingredients, like pecans, so feel free to do without.

Yield: 4 dozen muffins

Bake time 20 mins/doz

Ingredients:

(Wet)

(Dry)

  • 1 cup flaxseed
  • 1 cup coconut
  • 8 cups whole wheat flour
  • 2 t baking powder
  • 2 cup chocolate chips
  • ½ c chopped pecans

1. Combine wet ingredients in a large bowl and mix thoroughly.

2. Slowly add dry ingredients and mix well.

3. Grease or line your muffin tin. Fill with batter 3/4 way full.

4. Bake at 400F for 20 minutes or until golden brown.
